Fava Beans and Chicory

Ingredients for 4 people:

  • 1 lb of chicory
  • 1 lb of dried and peeled fava beans
  • 1 gallon of water
  • 1.5 Tbsp of salt
  • 1 Tbsp of EVOO
  • 4 slices of bread 

 

Directions:

  • Soak the fava beans overnight 
  • Bring the water with salt to a boil and add the chicory
  • When cooked drain the chicory and set it aside, keeping the water to use for cooking the fava beans
  • Cook the fava beans until they fall apart and the consistency resembles mashed potatoes (use a fork if you need to reach a thick consistency, not runny)
  • Toast the slices of bread
  • Serve chicory and fava beans on a plate (see picture)
  • Drizzle with EVOO and serve with bread
