Our dear friend Jenny named this one and we love it. “Fermentour in Trentino and Alto Adige-South Tyrol” traces the food histories of fermentation in this mountainous northwestern region of Italy. In fermentation, microscopic organisms “transform food and extend its usefulness.” Lest this definition frighten you away, do note that beer, wine, bread, cheese, cured meat, and sauerkraut are all fermented foods.
Indeed, fermented foods are found around the world and both medicine and folklore agree that they help people to stay healthy. In addition to tasting the works of local foodmakers, this tour offers a chance to explore a lesser-known region of Italy, very much unique for its Austrian influence.
